Opening date target
We are aiming to open the bakery by May 10th!
Detailed progress updates
We have been busy getting the space ready: redoing floors, painting, and moving equipment in. And we just received our mechanical and plumbing permit for installing the new walk-in fridge, bread oven, and giant mixer.
The new 8 x 12 foot walk-in fridge is scheduled to be installed April 11th. This will allow us to slow-proof dough in quantity, which translates into large amounts of delicious bread.
The bread oven installation is scheduled for April 16. If all goes well, it will be done in three days. Once in place, its four decks can bake up to 100 loaves at a time.
The remaining electrical and plumbing work should be completed around the same time, so the oven will have steam and ventilation, and the mixer will be able to use its combined 10 horsepower motors to make quick work of 50-pound sacks of flour at a time.
Baking is starting
In early April, Shawna and Murph will begin baking to dial in recipes and production processes. First up will be bagels, cookies, and granola. Then sourdough bread once the bread oven is up and running. This means that pre-purchase (subscription) holders can start picking up their baked items before we actually open, without the weekly limit (but based on availability, of course). Pre-purchase customers will receive email updates once subscription fulfillment becomes available.
Pre-sales update
We've extended the window to pre-purchase bread, bagels, cookies, and granola. The final day to buy these will be May 10th. This is your last chance to lock in current prices for these products (and pick up baked goods prior to opening, if you act fast). And remember that every pre-purchase (subscription) helps the bakery to reduce our loan balance and lower future debt payments.
Regular $99 bakery co-op memberships will continue to be available after opening. These co-op members shares include the 20% off lifetime discount, and here's a fun fact that many people don't realize: member shares can be sold back to the co-op.

Payment plans
Payment plans are still available for Founding Memberships (50 loaves + bakery co-op membership) as well as the add on pre-purchase plans (bagels, cookies, granola subscriptions). You can help launch the bakery and spread the payments over 12 months.

We craft nourishing, handmade sourdough breads and baked goods, using high-quality grains and wholesome ingredients from Orcas Island and the Pacific Northwest.
Orcas Bakery is a member-owned co-op, dedicated to enriching our community through nutrition, education and mentorship, opportunities to participate and learn, and school programs to embrace future generations.
Orcas Bakery is located at the corner of North Beach Road and A Street. We will offer retail and wholesale sales, and hope to have our bread available at island stores and restaurants, and through school programs and other local organizations.

Who we are
Shawna Hanan is a passionate baker and previously ran Three Sisters Bakery, Luna’s Cafe, and a wholesale bakery in Ashland, Oregon. She is well known for her pies and granola sold at the Orcas Food Co-op. Shawna’s passion for bread took her to London to attend The Sourdough School, where she obtained (and smuggled home) the 100+ year-old sourdough starter that will be used at Orcas Bakery.
Murph (Michael Murphy) is a notorious island baker and bread barterer, and has become known for his seawater bagels that have been called “best bagel west of the Mississippi” by many East Coast transplants. He is also co-owner of the Wanderlust + Wildhearts store in Eastsound.
Shawna and Murph have assembled a team of advisors with extensive experience in retail and wholesale bakeries, business planning, marketing, accounting, finance, legal, real estate, supply chain, operations, retail channels, modeling, and community outreach.
How the funds are being used
We’ve done extensive financial planning to ensure success, and established the following budgets: startup capital (space acquisition, legal, initial lease payments), bakery buildout (space improvements, equipment, installation), and first-year operating reserves.
Raising these funds through founding memberships ensures that Orcas Bakery can launch successfully, with enough funding and minimal debt payments, so we can bake your bread while we build our wholesale and retail business. Please contact us for more information.
These funds are NOT being spent on fundraising efforts. All materials and services so far, including artwork, baking, photography, video production and voiceover, website design, fundraising site design, signage, flyers, Roses equipment storage, and bakery co-op incorporation, has been generously contributed by Orcas Island residents. The fine print
* All pre-purchases (subscription) are good for ten years, limit one item per week. For example, if you have pre-purchased bread and granola subscriptions, you can redeem one loaf of bread and one pound of granola per week for 50 weeks, or spread them out through Spring of 2034.
